Happy Friday, friends!! My friend Kristen Wickstrom is writing this blog to you today. She is our newest team member at Swell Studios. I don’t know about you guys, but sometimes, ok most of the time, salad just doesn’t cut it when I’m really hungry. During the summertime, I’m not too keen to reach for more filling meals like pasta or hearty soups because they’re way too hot to even think about, and burgers or other not-as-healthy options aren’t really my first choice either. So! That being the case, I decided to craft a delicious salad that would be super healthy and super filling. Here’s what I came up with:
Ingredients (all Organic and mostly from Trader Joes):
- Kale & Spinach
- Grilled white onion slices
- Diced green pepper
- Diced Roma tomatoes
- Goat cheese crumbles
- Pomegranate seeds
- 1 cooked and diced “Cowboy Quinoa” Veggie patty (this one is specifically from Trader Joes but you could use whatever you like as the protein!)
Dressing:
- 1 oz Extra Virgin Olive Oil
- 1 oz White Vinegar
- Dash of freshly ground Salt and Pepper
- Fresh juice from 1/2 of a Lemon
For those of you who are still looking for something a bit more hearty than a salad, I also make these rice bowls from time to time using a lot of the same ingredients. Here’s what you will need for that version:
Ingredients (all organic unless otherwise stated )
- 1/2 cup cooked Brown Rice
- A sprinkle of multi-blend cheese (Mexican blend from Trader Joes is my favorite!)
- 1/4 Sliced and Grilled Red Pepper
- 1/4 Sliced and Grilled Red Onion
- 1/4-1/2 cup Grilled White Corn
- 1/4 cup cooked Black Beans (drained)
- 1 chopped Cowboy Quinoa Veggie Patty
This takes no time at all to heat up and assemble and it’s super tasty! Sometimes I will squeeze the juice of half of a lime over the top before digging in and it adds the perfect amount of zing.
